Strawberry Oat Muffins

Description:
Sweet and light. Great for breakfast, a quick healthy snack or dessert. Very delicious and mouth watering. This recipe is for high altitude so make necessary adjustments.

Ingredients:
3 C A.P. flour
4 tsp baking powder
1 tsp salt
2 C rolled oats
1 C sugar
2 C milk
1 C melted, cooled butter
2 eggs, slightly beaten
2 tsp vanilla
2 c coarsely chopped strawberries (if using frozen berries increase flour by 2 Tbs)(Measure strawberries after chopping them)

Directions:
Heat oven to 400 (convection).
Mix flour, baking powder, salt, sugar and oats.
Combine milk, butter, eggs and vanilla.
Stir into dry ingredients just until moistened.
Fold in strawberries.
Spoon, 1/4 cup each, into grease muffin cups.
Bake 10 to 13 minutes in convection oven until lightly browned.Stick toothpick in, if it comes out clean muffins are ready.
