The Gifford Family Tart

This tart makes a beautiful presentation at breakfast or at Tea time.

1/4 lb butter
3 apples
1/4 cup sugar
1 handful blueberries
Apricot Glaze
1 egg yolk
1 C dried apricots
1 tsp vanilla
1/2 c water
1 1/4 flour
1/2 C sugar
1 t lemon juice

Cream together butter and sugar, add vanilla, egg yolk and flour. Mix and press into tart pan.
Pare apples, slice and place decoratively on unbaked crust. Place a handful of blueberries on top of apples. After baking, spoon prepared apricot glaze on top. To serve sprinkle with powdered sugar and place a leaf of lemon balm on top.
