Vermont Cheddar Cheese Soup

This extremely simple recipe is a favorite any time of the year, but especially in the winter when guests are ready for a hearty start to dinner.

1 small diced carrot
1 small diced onion
1 small diced green pepper
2 stalks diced celery
2 Tbsp butter
2 quart chicken broth

Sauté the vegetables in the butter butter till tender. Then add chicken broth. Bring to a boil. Thicken with 1 cup of roux (butter and flour) as needed (until this coats the back of a spoon).
Next, add 1 and a half cups of Cabot Mild Cheddar Cheese (Cabot is best but feel free to use another brand). Stir until smooth and melted. DO NOT bring to a boil after adding cheese!!
