Widow Mccrea’s Zucchini Pie

A light and moist breakfast pie.

3 c. zucchini, chopped fine or shredded.
1 med. onion, chopped fine and sautéed.
4 eggs beaten.
1/2 c. grated Parmesan cheese.
1/2 c. oil.
1 c. Buttermilk baking mix.
3/4 tsp Salt, or to taste.
Pepper, to taste.
Parsley, to taste.
Garlic powder, to taste.
pinch each:
Red pepper
Herbs de province

Beat eggs in large mixing bowl, add cheese, oil and seasonings.
Add Buttermilk baking mix, beat well with mixer.
Fold in zucchini by hand. Pour into greased 10 inch pie plate.
Shredded cheese on top to finish if desired.
