Zuchinni Pie

This is a delicious crustless Zuchinni Quiche. Made fresh from our garden, a few simple ingredients and you have a delicious breakfast

3 Cups thinly sliced zucchini
1 small onion diced
1 cup bisquick mix
4 eggs
1/2 cup vegetable oil
1/2 cup Parmesan cheese grated
1 teaspoon parsley
garlic powder, salt and pepper to taste

We grate the Zuchinni into thin slivers using hand grater

Mix all ingredients together until the zucchini is evenly coated

Spray a 9" pie plate very heavily

Bake at 350 degrees for about 30 - 40 minutes or until lightly golden and a knife inserted in the center of the pie come out clean.
