Asparagus Tarragon Quiche

Description: This crustless quiche is a wonderful change from the ordinary, and a popular entrée at the Apple Bin Inn. Ingredients: 1/2 cup Bisquick 1 cup milk 2 eggs 1 cup asparagus spears (thin, lightly steamed, cut into bite-size pieces) 1 cup shredded Swiss cheese 1/4 cup scallions 1 tsp dried tarragon Directions: Preheat oven to 400 degrees. Spray bottom and sides of a large pie plate with Pam. Arrange asparagus on bottom of pie plate. Scatter the Swiss cheese, scallions and tarragon over the asparagus. Whisk together Bisquick, milk, and eggs until smooth. Pour mixture evenly into the pie plate. Bake 20 minutes to 25 minutes, until it is golden brown and firm to the touch. Cool 5 minutes before serving. Serves 4 – 6 as a main dish. (Note: you can also leave the asparagus spears whole and arrange in a pinwheel pattern. It makes it look pretty, but it's harder to cut.)
