Baked Apple Pancake

Description: A delicious dish for a special family breakfast, and a favorite of guests here at the Apple Bin Inn! Ingredients: 1 large Granny Smith apple 2 tbsp butter 1/4 cup brown sugar 1/4 tsp cinnamon 3 large eggs, room temperature 1/2 cup whole milk 1/2 cup flour 1/4 tsp vanilla extract Directions: Preheat oven to 400 degrees. Peel, core, and slice the apple. Melt butter in an 8 inch ovenproof skillet over medium heat. Spread apple slices in pan and cook until fork tender. Sprinkle with brown sugar and cinnamon, and cook until the sugar begins to melt. Remove from heat and stir lightly to coat apples with sugar. While the apples are cooking, whisk together the eggs, milk, flour, and vanilla in a mixing bowl until smooth. Pour the mixture over the cooked apples in the skillet. Bake for 20 minutes or until mixture puffs up and turns golden brown around the edges. Note: This recipe is for 2 servings. For 4 servings, use a 10 inch skillet, double the ingredients, and increase cooking time to 25 minutes. Enjoy!
