Bahn Bra'ch (or Welsh Tea-cake)
Description:
A delicious recipe that is (almost) impossible to get wrong. Dried fruit and "real English tea" - not Liptons will give this cake a tangy and authentic flavor Ingredients: 1 cup tea 1 lb raisins or sultanas or currants soaked in the tea for at least 24 hours(longer is no problem if you cover and place in the fridge 1/2 cup sugar 1 egg (beaten) 1 cup self-raising flour 1 teaspoon mixed spice Directions: Pre-heat oven to 375 degrees. Mix all ingredients together to form a soft consistency. Add a little more water or fruit juice if necessary. Use a non-stick 2 lb loaf tin, grease and line with baking parchment. Fill the tin with the mixture and bake for approximately 50 minutes until a metal skewer pushed into the center comes out clean. Take out of the oven and allow to cool. Whilst still warm, turn out of the tin and wrap in baking parchment. Store overnight and serve. Note: The Welsh eat Barn Brach for afternoon “tea”, sliced and spread with butter.
