Fruit Terrine
Description:
A delicious frozen variation on an ice-cream can be used as a breakfast appetizer or as a dinner dessert. Ingredients: Whites of 2 large eggs 1/3 cup powdered sugar 8 oz block mascarpone cheese 1 cup full milk yoghurt 1/2 lb raspberries 1/2 lb broken “Italian Crunchy Almond Cookies” (available in deli stores) Directions: Line 2 lb loaf in with baking parchment. Whisk egg whites until stiff and gradually add sifted powdered sugar whilst whisking all the time Gently fold in the yoghurt , quickly add the raspberries and broken cookies. Pour into the loaf tin and freeze overnight. To serve, remove from freezer, put in fridge for 10 minutes then turn out, slice and serve.
