Baked Eggs In Maple Toast Cups

This is a fun dish for children and adults alike. I tell kids these are "chicks in a basket." Cups (without eggs) can be refrigerated for several days before baking.

2 tbs maple syrup
2 tbs butter
8 slices white bread (crusts removed)
8 eggs

Combine syrup and butter in saucepan; heat until butter is melted. Press out the bread with rolling pin. Brush each slice with syrup mixture and press down into greased muffin cups. Break an egg in each cup and sprinkle with salt & pepper. Bake 400 for 15 minutes.
