Baked Oatmeal
Description:
Part bread, part oatmeal, 100% delicious! Top this with applesauce and fresh fruit for a beautiful presentation, and extremely healthy breakfast. Ingredients: 1/3 cup applesauce 1/2 cup sugar 1 large egg (beaten). 2 cups quick oats (not instant) 1 1/2 tsp. baking powder 1/2 tsp. salt 3/4 cup milk. Directions: Spray 9X5 loaf pan with non-stick cooking oil. Pour batter into pan. Bake at 350 for 50 minutes - 1 hour. Turn out onto an oblong platter, then dress with fresh fruit. This is delicious (and beautiful) when topped with homemade applesauce and cut fruit. Garnish with fresh parsley if you like! Alternatively, you can dress the baked oatmeal with apples, peaches, pineapple, berries (or whatever you have!) sautéed in cinnamon and butter – YUM!
