Baked Stuffed Breakfast Apples

A delicious first course. Can also be served as a dessert with vanilla ice cream or whipped cream.

4 tart crisp apples (Macintosh or Gala work well)
4 Tbls brown sugar
2 tsp nutmeg
2 tsp cinnamon
1 cup granola of your choice
Maple syrup
Butter flavored cooking spray
Sweetened Whipped Cream, optional

Preheat oven to 350 degrees. Coat an oven-safe dish with cooking spray and set aside. Core apples and place in oven safe dish. Mix brown sugar, spices and granola and fill apples. Pour Maple syrup over top and bake for 30-35 minutes. Remove apples and place in small serving bowls. Spoon granola/syrup mixture over apple and serve warm, with whipped cream, if desired.
