Cinnamon Apple French Toast
Description:
Make-ahead casserole, great for a special breakfast or brunch. Ingredients: 1 loaf whole wheat bread, cut in 1-inch cubes 12 eggs 1 cup milk plus 1 cup cream (or 2 cups half and half) 1 cup leftover fried apples with butter/sugar cinnamon syrup (if available) 2/3 Tbls caramel sauce (ice cream topping) 3 apples, peeled and diced (we use Macintosh) 2 tsp cinnamon 1/2 tsp nutmeg 1/4 cup brown sugar 1/3 cup maple syrup additional brown sugar for topping Directions: Heavily butter a 13x9-inch glass baking dish. Add half of the diced bread. If using fried apples, mix with diced apples and distribute half of the apples over the bread. Add the other half of the bread and top with the remaining apples. In a separate bowl, mix eggs, cream and milk (or half and half), 1/4 cup brown sugar and spices and pour over bread and apples in pan. Sprinkle with additional brown sugar and drizzle with caramel sauce. Cover and refrigerate over night. In the morning, remove casserole from the refrigerator and let sit at room temperature while oven preheats to 350 degrees. Bake at 350 for 45-55 minutes or until set in the middle.
