Banana-nut Bread
Description:
This wonderful bread is a great use for those over ripened banana's and can be made with or with-out nuts. applesauce can be used in-place of oil, and egg-beaters in place of real eggs. Can fit many dietary needs. Ingredients: In a blender put: Step #1 1 Cup oil or 1/2Cup applesauce 1 cup sugar (blend well) 2 eggs or 1/2 cup egg-beaters 3 ripe bananas, broken apart ADD: 3 Tsb. milk (skim or Soy) In a different bowl: STEP #2 2 Cups all-purpose flour ( by dipping method and level) 1 tsp.. baking soda 1/2 tsp. Baking power 1/2 esp. salt Step #3 mix together Step #4 ADD: 1/2 cup chopped nuts ( I used walnuts) 1/2 tsp. vanilla extract Directions: Put all of STEP #1 into blender and blend until smooth. Put all of STEP #2 in a sifter and sift together. After completing STEP'S #1 & #2 mix together well to complete step #3 Step #4 mix in chopped nuts. Pour into greased and floured loaf pan (9"X5"X3"pan) Bake in preheated moderate oven 350 degrees, for 1 hour or until tooth pick come out clean. Cool well and store overnight before cutting.
