Berry Cornmeal Muffins

Semi-sweet corn muffin

1 1/2 cups flour
3/4 c cornmeal
1/2 c white sugar
4 tsp. baking powder
1/4 tsp salt
zest of one lemon (optional)
1 c of fresh or frozen berries
2 large eggs lightly beaten
1 c milk
1/4 c safflower or canola oil
1 tsp. vanilla extract

Preheat oven to 400 degrees.
Mix all the dry ingredients together in large bowl.
In a separate bowl whisk together wet ingredients. (Keep berries separate).
Fold the wet ingredients into the dry ingredients and stir only until combined. Gently stir in the berries. Do not over mix the batter or tough muffins will result.
Poor into muffin tin, sprinkle with white sugar and bake for 15-20 minutes.
