Chili Relleno Bake

Description:
Green chile and veggie casserole

Ingredients:
12 eggs
1/2 c flour
1 tsp. baking powder
1/2 tsp salt
2 cans (4 oz) chopped green chilies
1 c mixed onions, red and green peppers
1 pint (2 cups) of cottage cheese
6 oz. melted butter cooled
2 c grated cheese

Directions:
Preheat oven to 425. Grease 9 by 13 glass dish.
In large mixing bowl, mix ingredients all together in order they are listed.
Pour the mixture into prepared dish.
Bake at 425 degrees for 15 minutes, reduce heat to 350 and continue to bake for 30 minutes or until center is set. Cover for the last 20 minutes to prevent browning.
