Blt Quiche

Crispy bacon, basil and roasted tomato quiche with pepperjack and cheddar cheeses.

1 Deep Dish Pie Shell
Bacon, 12 slices fried crisp, well-drained and cut into bite size pieces
1 small can diced tomatoes, drained
1/2 cup pepper jack cheese, grated
1/2 cup cheddar cheese, grated
1/2 cup pepper jack cheese, grated
Tomato, sliced

Egg Mixture:
3 eggs 1/2 tsp. salt
2 egg yolks 1/4 tsp. nutmeg
1 cup half and half 1/4 tsp. white pepper
1/2 cup milk dash cayenne pepper
1/2 Tbs. Basil dash celery salt

-Toast pie shell for 10 minutes at 350 degrees. Cut Bacon into bite size pieces, add 1 Tbs. Thyme. Cook until nicely crisp. Drain well.

-Spread tomatoes on a griddle pan and place in 400 degree oven for about 20 minutes or until dry. (it's ok if it browns around edges; adds to the flavor!)

-Spread cooked bacon evenly on bottom of toasted pie shell. Top with a layer of pepper jack cheese, a layer of dried tomatoes, and a layer of cheddar cheese. Top with 1 slice of tomato per slice of quiche. (usually 6 slices)

-Beat all the ingredients for the egg mixture together and pour into your prepared pie shell.

-Bake for 30 minutes in a 395 degree oven. If not set, cover with foil, and bake for another 10 to 15 minutes, or until set. To reheat, place in 300 degree oven for approx. 25 minutes.
