Luscious Lemon Bars

An elegant addition to any afternoon tea. The buttery crust and tangy lemon are a perfect pair in these delightful bars.

2 Sticks butter 3 cups of sugar
2 Cups plain flower 8 tablespoons self-rising flour
1/2 cup of sugar Powdered Sugar
6 eggs
4 lemons (juice and grated rind)

Cream together first three ingredients, spread in a 10x14 inch pan and bake at 350 degrees for 25 minutes.

Next, beat the eggs, add the juice and grated lemon rind of 4 lemons. Add 3 cups of sugar and self rising flour. Mix and spread over pastry already prepared.

Bake at 350 degrees for 35 minutes. Cool in pan. Sprinkle with powdered sugar on top. Makes 36.
