Blueberry MuffinsDescription: There is nothing quite as good as fresh muffins made with Maine Blueberries! Ingredients: 2 C flour 1/2 c sugar 1 tbs baking powder 1/4 tsp baking soda 1/4 tsp salt 1/4 c melted butter 2 eggs 1 1/4 c buttermilk 1 c blueberries (fresh or frozen) extra sugar Directions: Sift together flour,sugar, baking powder,soda & salt into medium bowl. Melt or place butter in 2 cup size measuring cup. Mix in eggs. Add buttermilk to make a total of 2 cups wet ingredients. Butter muffin tins well. Add wet ingredients to flour mixture and stir just enough to combine. Do not mix thoroughly. fold in blueberries. Fill 12 muffin tins Sprinkle muffin tops with 1/4 tsp sugar each. Bake 300 F convection oven for 25 min. Let cool 5 min before removing from tin. Recipe Summary: Yield: 12 muffins Prep Time: 15 min. Cook Time: 25 min.
