Breakfast Burritos

This is one of our favorites. Guests love that they can build the burrito as they like. The beautiful part about it is that it is so EASY to make and serve. Ingredients: 1/2 pound bacon cooked and crumbled and/or pork sausage cooked and crumbled 1 or 2 tomatoes chopped into cubes 1 onion chopped 1 green bell pepper (optional) 1 ripe avocado (chopped) Drops of lemon juice 1 bag frozen cubed potatoes (cooked per package directions) 6 to 12 eggs (depends on how many you are feeding) 1/4 cup milk 6 to 12 flour tortillas 1 to 2 cup shredded cheddar cheese Directions: Cook bacon and/or sausage and crumble into pieces. Chop tomatoes, onions and bell peppers and place out in separate bowls. Chop avocado and sprinkle with just a couple of drops of lemon juice. Shred one to two cups cheddar cheese Cook potatoes per package instructions, set aside. Mix eggs and a 1/4 cup of milk in a bowl and until well blended. Cook eggs in non stick skillet and scramble to just about well done. Heat tortillas in oven or on grill. Allow each person to make their own burrito, allowing them to chose which ingredients they prefer.
