Breakfast Lasagna

1 medium onion, chopped
1 lb. Bulk sausage
1/4 lb. Mushrooms, chopped fine
6 eggs, blended
5 oz. Jar salsa
5 oz. Mozzarella cheese, grated
5 oz. Monterey jack cheese, grated
5 oz. Cheddar cheese, grated
3 tbsp. Sour cream

Grease 9 x 12 pan. Saute sausage, mushrooms and onion together. Drain. Combine eggs and sour cream, and whip well. Put egg mixture in the pan and bake at 400 degrees until eggs set (5 10 minutes). Remove from oven. Spoon salsa over the eggs, add sausage mix over the salsa. Sprinkle the 3 cheeses over the salsa. Bake at 350 degrees for 30 minutes or until cheese is melted. Cut into square pieces.

Note: This may be made the day before--- bake eggs until set, follow the remaining directions thru sprinkling the cheeses on top. Cover and refrigerate until time to bake. Bake as directed above.
