Cheesy Oven-scrambled Eggs
Description:
Fluffy tender scrambled eggs. Great for a crowd if you double the recipe. We use farm fresh eggs from a local farmer here in rural Anson County. Ingredients: 1/4 cup butter (4 T) 1 doz. large eggs 1/4 tsp salt 2/3 cp half & half 1-2 tsp Dijon mustard 1 1/2 cups shredded sharp cheddar cheese Directions: Preheat oven to 350 F. Place butter in 2 qt. casserole dish and melt in oven. Beat eggs and salt with fork. Combine half & half and mustard together before adding to eggs. Pour egg mixture into melted butter in casserole dish. Bake uncovered approx. 20 minutes, remove from oven, gently stir to break up curds, and add cheese. Bake an additional approx. 20 minutes or until eggs are just done, stirring 2-3 times to break up curds. Total baking time about 40 mins. Remove from oven and serve or cover loosely with foil and keep warm for 5 mins. Sprinkle with chopped parsley, chopped bacon or ham or extra cheese. Recipe Summary: Yield: 4-6 Prep Time: 30 mins.
