Maple Pecan Chocolate-stuffed French Toast
Description:
Thickly sliced sourdough bakery bread, stuffed with chocolate, sauteed til golden brown and topped with toasted pecans and maple syrup. We use farm fresh eggs and pecans harvested on our property whenever possible. Ingredients: 4 slices sourdough bread, sliced 1" to 1 1/4" thick 4 oz. semisweet chocolate (we prefer Ghiradelli Semisweet, 4 oz pkg) 10 lg eggs 3/4 cup milk 1/3 cup whipping cream 1 Tbsp sugar 1 tsp vanilla extract 2-3 Tbsp veg. oil About 1/2 cup pecans, toasted and chopped Maple syrup, warmed Butter Directions: Carefully slice a pocket in side of each bread slice. Gently stuff each pocket with 1 oz of chocolate pieces. In bowl, combine eggs through vanilla. Place bread slices in 9x13 baking dish; pour egg/milk mixture over bread, carefully turn to coat 2-3 times, and soak overnight in refrigerator. Heat large frying pan, add oil. Saute French toast slices on medium heat for approx. 20 mins., turning as necessary, til browned and puffy, adjusting heat to prevent burning. Near end of cooking time, top each slice with 1 tsp unsalted butter and let melt. Remove from pan; slice on diagonal, place on plate, sprinkle top with pecans and drizzle with 1-2 T. warm maple syrup. Serve with additional maple syrup and butter to taste.
