Chicken Tahitian

Description:
This dish has been a hit at the inn for decades and whats great is that it is easy to prepare. It's set up for 8 servings but can be easily expanded.

Ingredients:
8 Chicken breasts, boneless & skinless
1 12 oz. can of frozen orange juice
1/4c butter, cut into pieces
2T curry powder
1T ground ginger
2T dry mustard
1/4 soy sauce

1 can pineapple chucks
1/2c sliced almonds
2 avacodos

4c cooked rice

Directions:
Marinate in 9x13 baking pan the orange juice, butter, seasoning, and soy sauce, add chicken. Marinate 12 hours in refrig.

Heat oven to 350 degrees. Bake 90 minutes, basking every 30 minutes.

Serve on bed of rice, garnish with avocado, pineapple, and almonds.
