Wilted Andive Salad
Description:
Orginally my Mother would send us kids out in the Spring to remove all of the daniloins from the yard, the leaves we would use in salad and the flowers became wine but that's another story. Today its easier to use endive in the salad. Ingredients: 3 strips of bacon 1 small onion 1 head of endive 1 egg 1/2c vinegar 1/4c water 1 tea sugar 1/8 tea dry mustard 1/8 tea salt 1/8 tea pepper Directions: Cut bacon into small bits, fry over med heat until well done. Chop the onion fine and add it towards the end of the bacon frying. Put the egg, vinegar, water & seasoning into a shaker, mix well. Break up endive into bowl, add seasoning to bacon, cut heat, stir and pour over endive. You can decorate with a few danilion flowers if you have them. Recipe Summary: Yield: 4-6 Prep Time: 20 min.
