Chilled Tomato Soup With Crab Salad

Cold tomato soup served over crab. Perfect for spring lunch with the ladies.

2 Tablespoons extra virgin olive oil
2 shallots, finely diced
1 clove garlic, finely diced
3 lbs ripe plum tomatoes, chopped coarsely
1 can tomato juice
salt, pepper
1/2 lb lump crab meat, picked for shells
1 bunch chives
1 lemon, halved

In a blender, place all the ingredients for the soup and process until smooth. Pass the soup through a sieve. Check the seasoning. Place in the refrigerator for at least 2 hours to chill.

For the crab salad garnish, after picking through the crab to remove any shell, place in a bowl with the chives, lemon juice, salt and pepper.
Mix well and set aside.
For service, mound the crab in the center of a bowl or use a ring mold to form a cylinder, pour soup around the crab. Serve chilled.
