Garlic- Braised Whole Chicken With Great Northern Beans & Leeks

Perfect for those wintry days and everyone will love this hearty dish. Chicken with leeks and vegetables.

1 whole chicken
5 bulbs garlic, cloves separated and peeled
5-6 cups chicken stock
1 1/12 cups great northern beans
10 sage leaves
3 leeks, cut into 3 inch pieces
3-4 tablespoons butter
Sourdough bread
Extra virgin olive oil

Season the chicken with salt and pepper and slice the skin between the legs and breast. Push the legs so that they lay flat. In a medium stock pot, place the chicken, garlic, beans, stock, sage, thyme, butter, and leeks. Cover with a lid and place in a 350 degree oven. Baste the chicken every 20 minutes until tender, about 2 hours. Remove the leeks from the pan when tender and reserve.
For the sourdough bread: cut into1/4inch slices, lightly brush with olive oil, season and toast.
To plate: Place to toasted bread in the center of a bowl. Slice the reserved leeks into rounds and place on the croûtons. Spoon beans and ladle some of the cooking liquid into the bowl. Slice part of the breast and some of the leg meat onto the leeks and croutons. Garnish with sage leaves.
