Chocolate Zucchini Bread

The chocolate gives a new twist to the original Zucchini bread. You can satisfy your sweet tooth while making sure you are getting your required vegetable servings. This is absolutely delicious!

3 eggs
2 cups sugar
1 cup oil
2 cups zucchini, not peeled, put through food processor
2 squares chocolate, melted
3 cups flour
1 tsp. salt
1 tsp. soda
1/4 tsp. baking powder
1 tsp. vanilla
1 cup coarsely chopped nuts

Beat eggs until foamy. Add sugar, oil, zucchini, and melted chocolate. Mix. Add flour, salt, soda, baking powder, vanilla, and nuts. Bake in loaf pan at 350 degrees for one hour.
