Fruited Loin Of Pork

Enjoy the fruits of the harvest! Tender, juicy pork loin stuffed with colorful fruit makes an inviting presentation. Serve with wild rice and steamed green vegetable. Prepare a day in advance and cook 1-1/4 hour before serving and enjoy your guests!

6 8-10oz boneless pork chop or pork loin w/pocket cut
1 Apple
1 Apricot
1 Peach
1 T Chopped pecans
2 T Apple juice or cider
6 T Orange marmalade

Mix apple, apricot, peach, pecans and apple juice together. Stuff into pocket. Top with 1 T. each orange marmalade. Bake covered 1 1/4 hour at 350 (or until internal temp 165). Serve with wild rice and a steamed green vegetable. Enjoy!
