Crustless Asparagus Quiche

Beautiful and tasty quiche dish. Perfect for breakfast, brunch or dinner. Great with fresh fruit and sausage for breakfast; just as wonderful for lunch or dinner with a mixed field green salad and crusty bread.

1 dozen eggs
1 cup sliced steamed fresh asparagus
2 cups cottage cheese
6 tablespoons melted butter
2 cups shredded sharp cheddar cheese cheese)
1/2 cup milk 1/4 cup diced onions
1/4 teaspoon dill weed
1/4 cup diced green peppers

In a large bowl beat eggs. Cut off tips of asparagus and set aside, and dice remaining asparagus. Combine the diced asparagus and the rest of the ingredients except for the asparagus tips and mix well. Spray two deep-dish glass pie pans (or one 9x13 inch glass-baking dish) with cooking spray, and then fill with contents of mixing bowl. Place asparagus tips on top. Bake in a 350 degree oven for 40-50 minutes. Let stand 5 minutes then cut into wedges and serve.
