Cucumber Slaw

Very tasty and can be stored for a long time in the cooler or freezer.

7 c. cucumbers, sliced thin
2 tbsp.salt
2 c. sugar
2 tsp. mustard seed
1 c. onion, sliced thin
1 c. vinegar
2 tsp. celery seed

Place cucumbers, onion and salt in a large bowl. Refrigerate for 4 hours. Combine vinegar, sugar, celery seed and mustard seed in a pan and bring to a boil. Drain cucumber mixture. Pour hot mixture over cucumber and onion slices. Let marinate for 24 hrs.

Prep Time: 10 minutes, but then must sit for 24 hrs.
