Easy Cinnamon Rolls

Description:
Buttermilk and Cream Cheese Cinnamon Rolls
Recipe can easily be doubled

Ingredients:
1 cup flour
1 tsp baking powder
1/4 tsp salt
good pinch of baking soda
3 tablespoons chilled butter
1 tablespoon sugar
1/4 cup buttermilk
1 egg
1 to 2 tablespoons melted butter
1 to 2 tablespoons sugar
1/2 to 1 tsp cinnamon

1/4 cup cream cheese

Directions:
Heat oven to 425 degrees. Lightly grease baking sheet or use non-stick.
Combine flour, baking powder, salt, baking soda and 1 tablespoon sugar in bowl.
Cut in chilled butter to above mixture with pastry blender or 2 knives.
In separate container, mix buttermilk w/ egg and add to flour mixture. Mix until is comes together. Turn out onto flour surface, sprinkle with a little more flour and kneed a few times. Flatten with hand then roll to a rectangle. If doubling recipe, divide in half first doing one at a time. Roll out till about 1/4 inch. Spread melted butter on top, thinly to coat. Mix together sugar and cinnamon and sprinkle over butter. Roll from the long edge and pinch together to close. Slice 3/4 to 1 inch intervals and place sliced side down on baking sheet. Bake for 10 to 12 minutes or until lightly brown. Check at 8 minutes if your oven bakes quickly. Remove from oven, quickly soften cream cheese in microwave (12-20 seconds) and spread over rolls while cooling.
