Eggs With Cream And Spinach

At the Maine Stay, we love to serve something green at breakfast - and creamed spinach just hits the spot!

3/4 cup heavy cream
1/2 cup chopped onion
4 T butter
2 cloves chopped garlic
20oz. spinach (can use fresh or frozen chopped)
6 eggs
Parmesan cheese

Cook onion in butter in a skillet, stirring until soft (about 2 minutes). Add garlic and season to taste with salt and pepper. Cook while stirring for 1 minute. Add spinach and 1/8 teaspoon pepper and cook until wilted.
Drain spinach in a colander, pressing to remove extra liquid, and then chop. Divide spinach among 6 ramekins, then spoon cream over spinach. Crack eggs into ramekins and top with a dash of salt and pepper and the remaining cream. Sprinkle each ramekin with the parmesan cheese. Place ramekins in a shallow baking dish and bake in 350 degree oven for 15 -20 minutes, until whites are just set and yolks are runny.
