Fresh Strawberry Bread

Fast, easy and one of the most fragrant breads you'll bake! Perfect way to use the sweet, but bruised strawberries Ingredients: 2 cups fresh strawberries 1 tsp baking soda 3 1/8 cups all-purpose flour 1 1/4 cups vegetable oil 2 cups white sugar 4 eggs beaten 1 Tbsp ground cinnamon 1 1/4 cups chopped pecans 1 tsp salt Directions: 1. Preheat oven to 350. Grease and flour two 9x5 in loaf pans. (I use 5 small loaf pans or decorative Bundt pan. 2. Slice strawberries and place in medium sized bowl. Sprinkle lightly with sugar and set aside. 3. Combine flour, sugar, cinnamon, salt and baking soda in large bowl. Mix well. Blend oil and eggs into strawberries. Add strawberry mixture to flour mixture, blending until dry ingredients are just moistened. Stir in pecans. Divide batter into pans. 4. Bake for 45-50 minutes, or until tester comes out clean. Let cool in pans about 10 minutes, then turn out and let cool completely.
