Description:
A beautiful quiche, filled with aromatic basil, bacon and tomatoes. Great when the garden is in full bloom! Ingredients: One piecrust, unbaked 1/2 cup cooked bacon, chopped (I use pre-cooked bacon) 1 cup sliced fresh vegetables (onion, zucchini or spinach, sun-dried tomato) You can easily use more, if you wish. 2 cups shredded Monterey Jack cheese 2 cups half and half 6 eggs 1 tsp Cavender's Greek Seasoning or your choice 1 scant Tbsp chives Directions: Night before, combine, half and half and eggs. Beat well. Store covered overnight in refrigerator. Roll out piecrust, place in pie plate (that you've sprayed with non-floured cooking spray. Crimp edge. Sprinkle half the cheese on bottom of crust. Place sliced spinach and onion over cheese. Sprinkle about half of remaining cheese on this layer. Follow with tomatoes, bacon and final layer of cheese. Cover and refrigerate overnight. Next morning, preheat oven to 350. Season the egg mixture. Pour egg mixture over all. Sprinkle chives over top. Allow to sit for at least 10 minutes. Bake 1 hour and 15 minutes. Let cool 10 minutes before slicing and serving.
