Description:
This is a wonderfully light, very fluffy egg dish with mass appeal and lovely presentation. Level of difficulty: None. Very omelet like but a more lovely presentation and also, like omelets, a million different versions. Ingredients: 1 Dozen Eggs 1 lb. of Monterey Jack Cheese (you can alter this with sharp cheddar as well) 2 cups of cottage cheese 1/4 cup of flour 1 tsp. of baking powder stick of butter (if you like it, you can saute 1/2 an onion in the butter and add it as well. Omit if you dislike onions.) Spices that you enjoy that can be used effectively with egg dishes. At Cumberland Falls B+B uses all of the following in different permutations of this egg dish: sage, thyme, lemon pepper, garlic, tarragon. If you choose to do this, you can also put very small cubes of cream cheese throughout this egg. It is a different taste and very delicious. Directions: Break one dozen eggs into a bowl. Beat thoroughly. Add the flour, baking powder and the spices that you have chosen for this prep. Recipe Summary: Yield: 12 Prep Time: 20 mins.
