Hawaiian Ahi Tuna With Linguine

Sauteed Ahi Tuna in a white wine garlic caper sauce over linguine Ingredients: 1/2lb. linguine 1lb. Hawaiian Ahi fillets (or other firm white fish) 3 tablespoons Macadamia nut oil 1/2 onion, thinly sliced 1 clove garlic, minced 3 tablespoons dry white wine 2 tablespoons sun-dried tomatoes thinly sliced (don't substitute fresh for these) 2 tablespoons capers 1/4 cup grated Parmesan cheese 1/2 teaspoon salt 1 tablespoon parsley, minced Directions: Cook linguine as directed on package; drain & keep warm. Cut fish into 1-inch cubes. Heat 1 tablespoon of the oil on medium heat ih a skillet and saute onion and garlic til golden brown; remove and set aside. Add remaining oil to skillet and saute fish for 2 to 3 mins. or til fish flakes easily when tested with a fork. Add onion, garlic, white wine, sun-dried tomatoes, capers, Parmesan and salt.
