Oatmeal-egg Poufs With Amaretto Glaze

Description: A healthy gourmet egg recipe that also presents very attractively. Ingredients: OATMEAL-EGG POUFS 6 large eggs 1 cup granulated pure cane sugar 2 cups whole milk 1 tablespoon pure almond extract 4 tablespoons unsalted butter, melted in microwave 2 cups old-fashioned oatmeal 1/4 cup sultana raisins Pam spray Fresh strawberries, sliced, for garnish Well-toasted almond slices, for garnish AMARETTO GLAZE 1 large egg 1 cup confectioners' powdered sugar 1/2 cup skimmed evaporated milk, undiluted 2 tablespoons unsalted butter, melted in microwave 1/2 cup Amaretto liqueur Directions: Preheat oven to 350 degree. FOR POUFS: Whisk eggs adding sugar, milk, almond extract and butter until well mixed. Stir in oats and sultanas. Spray Pam on bottom of 6 large non-stick muffin tins. Pour mixture into tins until almost full. Bake at 350 degrees for 30 minutes or until lightly browned on top. FOR AMARETTO GLAZE: Whisk egg, sugar, milk and butter in saucepan. Bring to boil, stirring constantly. Cook about 3 minutes or until thickened. Remove from heat and stir in Amaretto. For each serving, place a tablespoon of the Amaretto glaze onto the plate and place an inverted pouf on the glaze. Spoon another tablespoon on top. Garnish with slices of strawberries arranged diagonally sticking up. Sprinkle the toasted almonds across the top.
