Turkey & Mango Enchiladas

Turkey and Mango melanged together to make a tasty south-of-the-border main dish

2 cups cooked & shredded turkey (or chicken)
3 cups (12 oz.) shredded Pepper Jack cheese
1 can (4.5 oz) chopped green chilies
1/2 cup chopped onion
1 large very fresh mango, diced
1/4 cup cilantro, freshly chopped
1 can (19 oz.) green chile enchilada sauce
8 corn tortillas
3/4 cup dairy sour cream
1 large ripe avocado, sliced
Cilantro to garnish

Combine turkey, 2 cups of cheese, green chiles, onion, mango and 1/4 cup cilantro. Heat enchilada sauce in microwave. Heat tortillas about 1 min. or less in microwave til soft.
Spoon 1/3 cup turkey mixture down the center of each tortilla and top with 2 tablespoons sour cream. Roll and place tortillas seam-side down in 9X12 baking dish. Pour heated enchilada sauce over top and sprinkle with remaining 1 cup of cheese.
Bake uncovered 20 to 30 mins. at 350 degree til cheese is browned and enchiladas heated through.
Serve 2 per person topped with slice of avocado and sprig of cilantro
