Make these with a simple egg dish and a coffee cake and you've got a great breakfast! Add more garlic to suit your own taste and let the compliments come in. These can even be made for other meals! Ingredients: 1 1/2 Tablespoons extra virgin olive oil 1 1/2 Tablespoons roasted garlic flavored olive oil 2 1/2 lbs yellow flesh potatoes (I use Yukon Gold) 3/4 teaspoon salt 1/4 teaspoon freshly ground black pepper About 1 cup red pepper, cored, seeded and cut into 1/2 inch dice About 1/2 cup green onion, cleaned and cut into 1/2 inch slices 1 large clove garlic Directions: Put the oil into a 12" non-stick skillet. Heat until hot over medium heat. Add the potatoes, then sprinkle with salt and pepper. Stir well then cover and cook for a few minutes. Stir well, then cover again and cook for another few minutes. Uncover, stir well, then continue to cook uncovered while stirring often for another 6-8 minutes, until the potatoes are cooked through and browned. Add the other vegetables (be creative!) and continue to cook while stirring until vegetables are done, about 4 minutes.
