Lathrop House Laughing Rhubarb
Description:
Start with rhubarb from your garden, as we do, add nothing but sugar and water and you have a most sensual and mouthwatering treat. Grandma gave me a taste for the finer things in life, and this was one of them. Serve with whole milk yoghurt topping. Ingredients: Rhubarb stalks, white sugar or a mild honey or brown sugar if you must. Directions: Chop rhubarb stalks into 1/2 inch to one inch lengths. Store-bought rhubarb is fine, just don't use any part of the leaves. Place in saucepan with barely enough water to cover, watch closely and remove from heat almost as soon as water simmers. Check for rhubarb to melt in your mouth but try not to let it turn to mush. Remove from heat and add sugar, stirring and tasting as you go. This is the fun part! Be sure to have enough sugar on had, it will take quite a bit. Stop while the confection is still a bit tart. Laugh while you make this, because it's so easy, and life is good.
