Mom's French Beignets

Description:
Delightful, melt in your mouth treat! Just like you get in the French Quarter!

Ingredients:
3/4 C. warm water
1/2 pkg. quick-rising active dry yeast
1/4 C. sugar
1/4 tsp. vanilla
1/2 tsp. salt
1/2 C. canned evaporated milk
1 egg, lightly beaten
2 T. shortening
3 1/2 C. flour
Vegetable oil for deep frying
Powdered sugar for dusting

Directions:
Place the water in a shallow bowl and sprinkle with the yeast, stir to dissolve, and let stand until foamy, about 5 minutes.
In a large bowl, combine sugar, vanilla, salt, milk, egg and shortening. Stir in the yeast and mix thoroughly. Gradually add flour, about 1 1/2 C. at a time. Mix until well blended, using your fingers if the dough becomes too stiff. Cover the bowl with plastic wrap and refrigerate overnight.
Pour vegetable oil into a deep fryer to at least a 3 inch depth to 360*
Gather the chilled dough into a ball and pat or roll it on a lightly floured surface to a thickness of about 1/4 inch into a large rectangular shape. Using a sharp knife, cut the dough into 2 x 3 inch rectangles. Drop a few at a time into the hot oil and turn them with a tong until golden brown on all sides. Drain on paper towels and dust immediately with powdered sugar. Dough can be stored in the refrigerator for about 5 days, breaking off and rolling only what you need.
