Sour Cream Banana Nut Bread

Yummy Breakfast Delight! The kind that stays nice and moist!

1/2 C butter softened (1 stick)
1 C sugar
2 eggs
1 tsp vanilla
1 1/2 C flour
1/2 tsp salt
1 tsp baking soda
1 C ripe mashed banana

1 C chopped walnuts
1/2 C sour cream

Preheat oven to 350.

Cream butter & sugar together. Add eggs & vanilla. Sift together all dry ingredients and add to creamed mixture. Mix until well blended. Add bananas, 3/4 C of the chopped nuts, the bananas and sour cream. Blend together until all ingredients are mixed.

Bake in greased loaf pan at 350 degrees for 1 hour. If desired, prior to baking add chopped nuts to the top of each loaf and lightly press them to set them into the top of the loaf.

If using mini bread pans, allow about 25-30 minutes baking time. Makes 8-10 mini loaves.
