Ol' Timey Fit As A Fiddle Beans

Description: In Blue Ridge Country everbody grows beans! So this recipe adds a little zest to an already healthy green bean. They'll git your blood flowin'. Ingredients: 5 Cups fresh-grown green beans or 4 – 8oz cans green beans 4 Slices of Bacon 1/4 C Parmesan Cheese (grated or shredded) 2 Garlic Cloves, chopped and minced Black Pepper to season Directions: Heat a large frying pan or skillet on medium heat. Cook bacon until crispy. Take out bacon and set aside to cool, once cooled, crumble the bacon. Empty pan of bacon fat leaving a nice generous coating on inside of pan. Add Garlic to heated pan and sauté garlic ‘til it begins to brown slightly. Add topped and tailed green beans to heated pan and stir into garlic. Heat thoroughly for 5-8 minutes until green beans start to lose bright color. Toss in Parmesan Cheese and sprinkle with black pepper. Add crumbled bacon into mixture last. Toss together and serve hot. Makes 8 side dish servings. (Or two big ol' heapin' bowlfuls if ya can't resist them thangs!)
