Take your Key Lime Pie to the next level - this is amazing! If you can't find the Biscoff* cookies, graham crackers will work fine. * Biscoff cookies are a crisp caramelized European biscuit (I can find them in the cookie isle at Wal-Mart) Ingredients: 1 Cup sweetened condensed milk 6 Egg yolks 1/2 Tbsp lime zest 1/2 Cup Key Lime juice [if you can't find the real deal, regular lime juice will work fine] 1/2 pint of soft vanilla ice cream (a higher fat content ice cream works the best, try Hagen Daz or Ben & Jerry's) 1 Biscoff cookie pie crust: 1 1/2 cups Biscoff cookie crumbs 1/4 cup sugar 6 tablespoons (3/4 stick) unsalted butter, melted Directions: For Crust: Preheat your oven to 350 degrees. Combine the Biscoff crumbs, sugar and butter in a bowl. Press into a 9-inch glass pie pan, making sure the sides and the bottom are an even thickness. Bake for 10-15 minutes until firm and golden. Allow the crust to cool completely before adding your filling. For Filling: Add yolks to condensed milk and mix about 5 minutes. Add vanilla ice cream and mix until combined. Add lime juice and zest and mix well, fold into pie crust. Place in freezer until well set. Garnish with whipped cream and lime wedges. Enjoy and get ready for the compliments to come rolling in!
