Orange Cake With Orange Or Chocolate Glaze

Ingredients: 1 1/2 cups butter, softened 1 1/2 cups sugar 3 large eggs 1 1/2 tsp vanilla 3 3/4 cups flour 1 1/2 tsp baking powder 1 1/2 tsp baking soda 3/4 cup fresh orange juice 3/4 cup buttermilk Zest of 1 orange (optional) Glaze: 1/2 cup sugar 1/2 cup fresh orange juice 1 tsp vanilla extract 1 tsp orange extract (optional) -Or- 4 T melted butter (warm) 3/4 c chocolate chips Stir together until melted. Drizzle over cooled cake. Directions: Preheat oven to 350 degrees. Liberally spray a Bundt pan with non-stick cooking spray. In a large mixing bowl, cream together the butter and sugar until light and fluffy. While beating, add the eggs one at a time. Add vanilla. In a separate mixing bowl stir together the flour, baking powder and baking soda. Combine buttermilk and orange juice and add 1/3 of this to the butter mixture. Next, add 1/3 of the flour mixture, and continue alternating between liquid and dry ingredients until incorporated. Spread mixture evenly into prepared pan. Bake at 350 for 45 minutes or until cake tester comes out clean. Let cake cool in pan for 10 minutes then transfer to a cooling rack and cool completely. For the orange glaze: in a heavy bottomed sauce pan, combine the sugar and orange juice and bring to a boil over high heat. Reduce heat and simmer until the syrup has reduced by half, about 30 minutes. Remove from heat and add extracts; cool to room temperature. Once cooled, pour over cake.
