West Indies Banana Bread

Ingredients: 3 small, very ripe, bananas 1/2 cup brewed coffee 1 1/2 tsp grated orange peel 1/2 cup sugar 1/4 cup brown sugar 1/4 cup applesauce 1 egg 1 cup whole-wheat flour 3/4 tsp baking soda 1/4 tsp salt 1/4 tsp baking powder 1/2 tsp allspice 1/3 cup chopped walnuts Directions: Preheat oven to 350 degrees. Spray a small bread pan with non stick cooking spray. In a large bowl beat bananas until smooth. Add coffee and orange peel and mix well. Set aside. In another bowl, mix sugar, brown sugar and applesauce. Add egg and mix well. Add to banana mixture and mix until smooth. In a medium bowl, sift together dry ingredients. Add to banana mixture and mix until all ingredients are combined. Fold in walnuts. Bake 50 – 60 minutes, or until toothpick inserted in the center comes out clean. Remove from oven and let cool for 5 minutes. Remove from pan and slice when completely cooled.
