Raspberry/Coconut Muffins
Description:
Nothing like home-made Raspberry Muffins fresh and warm from the oven, to start your day. Ingredients: 3 cups Krusteaz Basic Muffin Mix 1 cup milk 1tsp vanilla 1/2 tsp cinnamon 1/2 tsp raspberry flavor 2 pts fresh raspberries 1/2 cup dried coconut flakes/chips (unsweetened) 2 eggs 1/2 block cream cheese Directions: mix milk, eggs, vanilla, cinnamon, raspberry flavor in bowl, add coconut and muffin mix and stir well. Fold in fresh raspberries. Preheat oven to 400 degrees, spray pam in muffin pan (12), spoon in mixture 1/2 full, cut cream cheese into twelve even sections. Place one on top of mixture, and cover with remaining mixture. Bake at 400 for 22 to 24 minutes (until golden brown).
