Ricotta Cake

A rich cheesecake like dessert, simple to prepare, but delicious!

1 package of cake mix (I usually use French Vanilla or Golden Vanilla)
Eggs, vegetable oil

4 eggs
2 lbs Ricotta cheese (I use whole milk ricotta)
1 cup of sugar
1 teasp. vanilla

Powered sugar, canned pie filling, fresh fruit

Preheat oven to 325
Grease and flour a 13 x 9 pan
Prepare cake mix as directed on the package.
Pour batter into pan.
In a large bowl, mix the eggs, ricotta, sugar and vanilla.
Carefully pour mixture evenly over cake batter.
Bake about one hour or until toothpick inserted into the center comes out clean.
Cool completely, then refrigerate until well chilled. Turn out onto serving tray. Serve with powered sugar on the top, or any fruit topping, canned or fresh.
