100 Birthday 10-carat DipDescription: Two Sisters and Their John celebrated 100 Years. This 10-carat (traditional gift for 100 birthday) dip recipe was created in honor of the toilet's 100th birthday on November 22, 2006 and has 10 carrots in it. This is a great make ahead recipe. Ingredients: 10 carrots (1-1/2 lb.), peeled 4 cloves garlic 2 T. vegetable oil 1/2 c. light mayonnaise 1/4 c. water 1/4 c. light sour cream 2 tsp. white or wine vinegar Pinch sugar Pinch salt Pinch pepper Directions: Preheat oven to 425o. Slice carrots lengthwise into 1/2-inch thick widths. In large bowl, toss together the carrots, garlic and oil. Spread on a baking sheet, then roast in bottom third of oven for 20 minutes. Remove garlic and set aside. Turn carrots over and roast for 20 minutes longer, or until tender. In a blender or food processor, purée carrots with garlic until smooth. Add mayonnaise, 1/4 cup water, sour cream, vinegar, sugar, salt and pepper. Blend well. Transfer to serving dish and let cool to room temperature, or refrigerate covered for up to 24 hours.
